The story of Tunday Kababi is one of culinary brilliance, historical significance, and cultural pride. Its origins trace back to the 18th century in the royal courts of Awadh, a state in Northern India under Mughal rule. During this era, the Nawabs of Awadh, known for their lavish lifestyles and love for fine cuisine, held a unique competition. They challenged their Khansamahs (royal chefs) to create kebabs so tender that they could be consumed effortlessly, even by those without teeth.

Amid the competition, Haji Murad Ali, a one-armed chef lovingly nicknamed “Tunda,” emerged as the standout talent. Using an extraordinary blend of at least 160 Indian and exotic spices, he crafted a kebab that was not only irresistibly soft but also rich in flavor. So delighted was the Nawab with the creation that he declared Murad Ali the winner, and the dish was henceforth known as Tunday ke Kebab, literally meaning “One-Armed Man’s Kebabs.”

This exquisite dish quickly gained popularity, not only in Awadh but also in other Mughal courts, becoming a hallmark of royal Awadhi cuisine. Over time, the secret recipe was passed down through generations, ensuring its authenticity and unmatched taste.

The legacy was further elevated by Mohammad Usman, the grandson of Haji Murad Ali, who recognized the importance of preserving and promoting this culinary heritage. In 1995, he established the famous Aminabad outlet in Lucknow, which became a beacon for food lovers. Mohammad Usman also partnered with renowned culinary expert Jiggs Kalra, participating in food festivals and taking Tunday Kababi beyond Lucknow’s borders, making it a national treasure.

Driven by a vision for global recognition, the brand expanded internationally, including the establishment of a branch in Dubai, ensuring that the flavors of Tunday Kababi reached audiences across the world. Over the past 10 decades, the kebabs have won hearts and palates, delighting everyone from commoners to global personalities.

Today, Tunday Kababi stands as a testament to the timeless allure of Awadhi cuisine. Its unique blend of history, tradition, and culinary innovation continues to captivate food lovers worldwide, ensuring that the legacy of Haji Murad Ali endures for generations to come.
